Curried Pancake Wraps
Pancake mix ingredients:
2 cups of rice flour
2 heaped tbsp potato flour
2 teaspoon curry powder
1 teaspoon coriander powder
1 teaspoon turmeric powder
Fresh coriander
Black pepper
1 tin of coconut milk
Filling ingredients:
1. Bean sprouts
2. Shallots
3. Garlic
4. Vegetarian Mince OR Minced Pork
5. Spring Onions
6. Thai Basil
7. Coriander
8. Soy sauce
Cooking Instructions:
• Sieve all the flour together, add the the powdered spices.
• Season with salt and pepper.
• Add coconut milk and mix together to form the pancake mix.
• Heat frying pan with some oil. Add sliced shallots and garlic.
• Add vegetarian mince and cook well, adding soy sauce to taste.
• Add bean spouts and fresh coriander. Mix well and set aside in a warm dish.
• Heat oil in frying pan and stir pancake mix well.
• Spoon mix onto hot frying pan and make a pancake.
• Spoon filling onto pancake, add Thai basil and wrap.
• Repeat....NOTE – keep pancake mix well stirred regularly between uses as the mix does settle to the bottom of the bowl.
• Serve with a selection of fresh salad leaves and Sweet Chilli Dip.
