Fish Masala & Aloo Gobi

I just made dinner this evening with hubby's help as "sous chef". 

It's a fish masala with aloo gobi on the side,  served with rice. All cooked on the hob from scratch.

I thought I'd share my recipes below.


FISH MASALA

- x2 salmon fillets

- X2 tins of chopped tomatoes

- X1 chopped onion

- 2tsp each of ground coriander; ground cumin, garam masala

- 1tsp of ground cinnamon and turmeric

- 1tsp each of garlic and of ginger paste

- ½ tsp chilli flakes 

- 1tsp salt

- Coconut Oil

*Heat oil in saucepan and sauté the onions.

*Tip the tinned tomatoes in and stir now and then - cook well

*Add all the spices, salt and pastes.. continue to cook - if getting too dry, add a bit of water. 

*Once up to a rolling boil, add the salmon gently on top and put lid on.  Allow to cook in own steam for 5 minutes.

*Reduce heat and keep lid on. Cook for further 10 minutes. 

*Always check everything is fully cooked! 👌🏻 

ALOO GOBI

- A medium bowl of cauliflower 

- A medium bowl of peas

- A tin of baby potatoes - chopped

- X1 chopped onion

- X2 tsp curry powder

- X3 oxo stock cubes

- X1 tsp garam masala

- ½ tsp chilli flakes

- Water

- 1tsp each of garlic and ginger paste

- Coconut Oil

*Sauté chopped onions in a little oil 

*Add all the vegetables and stir fry 

*Add all the spices, pastes, ground up stock cubed, chilli flakes and stir in well. 

*Continue to stir fry until vegetables are getting soft

*Add a bit of water if getting too dry. 

*Reduce heat and put lid on, continue to simmer, lid on, for 20 minutes. 

*Keep stirring well every now and again. 

*Always check everything is fully cooked before serving.
